STYLE   
Junmai Ginjo Genshu: Made with only rice, water, yeast & koji with the rice milled to 60%. It is cask strength leaving full flavor and body.    

Nama Chozo: This saké has a special edge to it in that it is only pasteurized one time whereas most all saké receives two pasteurizations. This provides even richer flavors, deeper character and body.    

TASTING NOTES   
Hearty hints of minerals, sweet black tea and dark caramel on the nose. Crisp and dry with a hint of sweet spice through the mid-palate. Ripe melon, brown sugar, and earth notes give way to a clean finish of spice and honey. The higher alcohol adds a kind of force or robustness without being overwhelming.
PAIRING NOTES   
Think clean and pure flavors of grilled salmon, clams and cod with asparagus or a spinach salad. The robust flavors and character will hold up to steak and many spicy foods as well.

FILTRATION: Moromi press.
